Lots of leftovers Fridge-cleaning time! On the left side I have egg noodles with salad mushrooms, kamaboko, and scallions, and stir-fried asparagus and lotus root. On the right are pearl meatballs, apple slices, and steamed cassava cake.

Before packing this lunch I drizzled a little canola oil over the noodles, then mixed them up well. It did keep the noodles from being so clumpy when I ate them, and they weren't as slippery and oily as stir-fried noodles can be.

Whew. This was a big lunch. I thought dinner would likely be late for me, so I packed something that would hold me a little longer. As it was, this was a bit too much for me. Dinner was on time, and a bit smaller than usual because I wasn't very hungry after this lunch.
