The
cheese meatballs were
something I made on a whim. A friend mentioned his mother
making delicious cheeseburgers with the cheese on the
inside, and while I never make meat patties that thick,
it sounded like something that would work with meatballs.
So I gave it a try, and it worked! The meatballs are
on a baked potato skin, because... well, why not? The
potato side is up, and it absorbs the meatball juice,
and that's tasty too.
There's the everpresent steamed broccoli,
of course. And a boiled egg,
which I cut in half and added olive slices to make eyes.
But it was missing something, so I added a grape tomato
nose. Ahh, much better! And, rounding out the meal,
There's a slice of almond cake.
