Here's another dish I like in restaurants, so
I decided to make it at home. It's actually pretty quick
and easy.
1/2 pound of beef, fat trimmed away 1/4 cup
water 2 tbsp soy sauce 1 tbsp katakuriko (potato
starch - or corn starch, if you don't have that) 1
1/2 tsp cooking oil 1 1/2 tsp
cooking oil (yes, again!) 2 cups of broccoli
florets 1 cup of sliced carrots, cut into ovals
or julienne strips 1 cup salad mushrooms, if
desired 1 small onion 2 tbsp water Pepper
or other seasonings if desired
Slice the beef into thin, bite-sized strips. Mix
the water, soy sauce, and katakuriko/corn starch in a small
bowl. Heat 1 1/2 teaspoons of oil in a large skillet
over moderate heat. Stir-fry the beef for about a minute,
until it's brown on the outside, then remove it
from the skillet. Add the other 1 1/2 teaspoons of oil
to the skillet, add the vegetables, and stir fry them
for about
2 minutes, until the broccoli turns bright green. Add
the remaining 2 tablespoons of water, cover, and
simmer several minutes. Then return the beef to
the skillet and add the soy sauce mixture. Cook, stirring
constantly, until it is thickened and boiling; boil
about 1 minute. Sprinkle with pepper or other spices
if you like, and serve.
