Let's hear it for simple recipes!
What you need:
Fresh spinach, very thoroughly washed Water
for boiling Whatever you want to season or mix
the spinach with
Get a pot that's big enough to hold all the spinach
you want to boil in its unboiled state. Fill it 2/3
of the way with water. Heat it to boiling. When it's
bubbling well, dump the spinach in. You may not be able
to get it all in the water at first, which is fine.
Just stir it for a minute and it will cook down. When
there's room, put in the rest. Cook for a few minutes,
until the leaves are softened, then drain well (I put
it in a colander and press with my hands to squeeze
out excess liquid) and serve.
Serve with whatever you like to eat boiled spinach
with. Me, I like to mix it with mayonnaise until it's
a gross-looking but delicious mess. I haven't met anyone
else (besides my sister) who will admit to liking it
this way.
You can cook other greens, for example mustard greens
or collard greens,
this way. I eat those with lots of mayonnaise too.
