Satoimo noodles are noodles made with satoimo, satoimo
being a hairy, weird-looking root that is also called
taro. The ones I found were lavender, which is what
attracted my attention. Purple noodles? Neat!
You can treat them the same as other kinds of noodles,
really. The easiest way is to boil them for 8 minutes,
drain, rinse with water to wash off the starch, then
serve them however you liked. I've mixed them in with
stir-fried vegetables and a little yakisoba sauce and
been pleased.
